1. Preheat oven to 350 degrees F. Over medium heat, saute mushrooms in vegetable oil until lightly browned, about 5 minutes, set aside.
2. Lightly spray a 9-inch glass pie plate and place crust inside. Crimp edges all the way around the crust.
3. Place ham, mushrooms, spinach, and cheese on top of crust.
4. In a bowl, mix egg whites, eggs, and milk until combined. Pour over top of ham, vegetables, and cheese and bake for 35 minutes.
