1. Chill 8 champagne glasses and prosecco 3 hours before serving.
2. Cut lime in 8 thin slices
3. Place softened lemon sorbet in a large bowl and gradually whisk in 3 cups of prosecco. Pour the mixture in the chilled glasses and garnish with lime slices. Serve immediately.
