1. Sauté onion and garlic in olive oil until soft, about 5 minutes. Place in a slow cooker along with bay leaves and herbs. Add beans. Cover with hot water by 1 inch.
2. Cook on high for 6 hours. Chill beans, covered, in cooking liquid until ready to use.
