Toast with Hummus and Avocado

  • 4 slices multigrain bread
  • 1 avocado
  • 1 cup roasted red pepper hummus
  • 8 mint leaves


1. Toast the bread. Cut the avocado in half lengthways. Remove the pit. Scoop out the flesh and cut into strips.
2. Spread the toast generously with hummus. Top with avocado slices.
3. Cut the mint into thin strips and sprinkle over the avocado.
