Virgin Watermelon Margaritas with Fruit Ice Cubes

Makes 6 servings
- 6 cups seedless watermelon, cut into 1 1/2-inch cubes
- 2 star fruit, cut into slices
- 1/3 cup sugar
- 1/4 cup fresh lime juice
- 1 small bunch fresh mint
1. At least 4 hours before you want to serve the margaritas, place 2 cups watermelon cubes and the sliced star fruit on a parchment-lined baking sheet. Freeze until cold.
2. Right before serving, combine remaining watermelon, sugar, 1/2 cup water and lime juice and blend until smooth. Transfer to a pitcher and add frozen fruit and garnish with mint and lime wedges.
To make super-easy watermelon margaritas (with a kick): Add a splash of tequila and a little triple sec to each glass. Grown ups only!
