Moroccan Chicken Salad Pita Pockets

Ingredients

  • 1lb rotisserie chicken
  • 1/4 cup hummus
  • 1/4 cup non-fat plain yogurt
  • 1/2 cup roasted red pepper
  • 3/4 cup golden raisins
  • 4 pita bread pockets
  • Harissa (optional)
 

Directions

1. Combine 1/4 cup hummus and 1 lb rotisserie chicken salad.
2. Stir in 1/4 cup non-fat plain yogurt.
3. Add in Harissa. This Moroccan spice blend adds some exotic heat.
4. Dice 1/2 cup roasted red pepper and add to the mixture.
5. Mix in 3/4 cup golden raisins to add welcome sweetness.
6. Spread mixture over pita bread slices and serve.
