Avocados Stuffed with Chipotle Chicken Salad

Ingredients

  • 1lb rotisserie chicken
  • 1 cup canned black beans
  • 1/2 cup chopped chipotles
  • 1/2 cup salsa verde (mild or spicy)
  • 2 tbsp chopped cilantro
  • 1/4 cup chopped fresh mint (optional)
 

Directions

1. Add 1/2 cup chopped chipotles in adobo sauce to 1 lb rotisserie chicken salad.
2. Add 1 cup canned black beans, drained and rinsed.
3. Stir in 1/2 cup salsa verde. Mild or spicy, it’s up to you.
4. Chop 2 tbsp (or more if you like!) fresh cilantro and add.
5. To get that mojito flavor, stir in 1/4 cup chopped fresh mint.
