Quick Tomato Relish

  • 1 lb tomatoes
  • 1-inch piece fresh ginger
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 1 cup chopped red onions
  • 1/2 tsp crushed red pepper flakes
  • 2 tbsp white wine vinegar
  • 2 tbsp raw sugar


1. Roughly chop the tomatoes. Grate the ginger and mince the garlic. Heat the oil in a medium saucepan and gently sauté the chopped onions, grated ginger, minced garlic and crushed red pepper 5 minutes.
2. Add tomatoes and cook for 5 minutes. Stir in vinegar and sugar and simmer for 10 minutes, stirring frequently, until mixture thickens. Season with salt (in moderation) and pepper.
3. Pour the relish into a 1 pint preserving jar, close immediately, and let cool. Store in the fridge.
