Watermelon Ice Pops with Mint

Makes 6 servings


  • 2 limes (juiced)
  • 3 tbsp granulated sugar
  • 6 1-inch slices watermelon, quartered
  • 1/2 cup mint, roughly chopped


1. Combine the lime juice and 4 tbsp water in a saucepan. Add the sugar and bring to a boil. When the sugar dissolves, remove from heat. Allow to cool.
2. Skewer the melon slices and place them all together in a bowl or tray that fits into the freezer. Pour the syrup over the melon slices, turn them a few times and leave them in the freezer for 1 hour.
3. Sprinkle with mint leaves and serve.


1. Blitz leftover frozen melon in a blender with some lemon sorbet for a yummy summer slushie. Top with a little Prosecco to make them even more special.
2. Dip them in iced vodka for a grown-up treat.
