1. Combine the lime juice and 4 tbsp water in a saucepan. Add the sugar and bring to a boil. When the sugar dissolves, remove from heat. Allow to cool.
2. Skewer the melon slices and place them all together in a bowl or tray that fits into the freezer. Pour the syrup over the melon slices, turn them a few times and leave them in the freezer for 1 hour.
3. Sprinkle with mint leaves and serve.
