1. Season the chicken as desired. Cook the chicken in a 12-inch nonstick skillet over medium-high heat until browned and cooked through, stirring often to separate meat.
2. Stir the sauce in the skillet and cook until the mixture is hot and bubbling. Season to taste. Serve hot or at room temperature. To serve, spoon about 1/2 cup chicken mixture into each lettuce leaf. Top with chopped cucumber, carrot strips, chopped peanuts or almonds, if desired.
