1. Halve the tomatoes and slice the garlic. Place 3 cups water, linguine, tomatoes, garlic, 1/4 cup parsley, 1/4 cup basil, olive oil, salt (in moderation) and pepper in a wide, straight-sided skillet. Bring to a boil.
2. Boil mixture, using tongs to turn ingredients so they cook evenly, until pasta is al dente and most of the water is absorbed, 8-10 minutes.
3. Toss with remaining basil and parsley and top with shaved Parmesan.
