1. Prepare the noodles according to package directions. Place in a colander, rinse with cold water and drain. Meanwhile thinly slice the green onions on the diagonal and set aside. Coarsely chop the red onion.
2. Heat the oil in a wok or large skillet. Add the snow peas, red onion and mushrooms. Stir-fry for 3 minutes over high heat. Add the bamboo shoots and stir-fry for 1 more minutes. Add the soy sauce, noodles and shrimp and cook for 5 more minutes or until shrimp are fully cooked.
3. Arrange noodles on a large flat plate and sprinkle with the green onions.
