Big Apple Pancakes

  • 2 cups flour
  • 1 tsp baking powder
  • 1 cup low fat milk
  • 2 tbsp vegetable oil
  • 2 large eggs
  • 1/3 cup golden raisins
  • 2 tsp ground cinnamon
  • 2 Golden Delicious apples
  • 2 tbsp butter
  • 1/2 cup confectioners sugar


1. Preheat the oven to 200°F. Mix flour and baking powder together, and whisk in milk and oil. Add the eggs, raisins and cinnamon and whisk until smooth.
2. Core the apples and cut into thin slices. Heat 1/4 of the butter in a 10-inch skillet over medium heat. When the butter is melted and bubbling, ladle 2/3 cup batter into the pan and tip to form a thin layer. Arrange apple slices on the batter and cook until bubbles form, about 3 minutes.
3. Flip the pancake using a spatula. Cook for 1 minute more, or until pancake is brown and cooked through. Repeat with remaining batter. Keep pancakes warm in the oven while you finish making the rest. Dust with confectioners sugar and serve.


There's no need to peel the apples.
