1. Beat the eggs, milk, cinnamon and vanilla together in a large bowl. Peel the pears and cut into quarters, remove the core and cut the segments into slices, set aside. Cut the bread slices in half diagonally. Cut the mint leaves into strips. Mix the yogurt, mint and honey in a small bowl and set aside.
2. Heat the oil in a skillet. Dip bread slices into the egg mixture and add to skillet (don’t overcrowd the pan). Cook for 4 minutes, or until golden brown. Flip and cook 3 minutes, or until both sides are golden brown and crisp. Divide French toast halves among 4 plates (3 pieces each) and top with pears and honey yogurt.
