Tomato and Feta Dip

Makes 6-8 servings


  • 2 pints red grape tomatoes
  • 1 pint yellow cherry tomatoes
  • 1/2 cup extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zest and juice
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1/4 cup finely chopped fresh basil
  • 2 (6-oz.) crumbled feta cheese


1. In a large bowl, toss together tomatoes, olive oil, garlic, zest, lemon juice, oregano, mint, salt, pepper and basil. Add feta and gently fold in.
2. Serve on crackers.


Leftovers (if there are any) are great tossed with some hot pasta. This dip gets better and better the longer it sits.
