  • 1 cup creamy peanut butter
  • 2 cups confectioners sugar
  • 1/4 cup butter, melted
  • 1 cup puffed rice cereal
  • 3 cups semi-sweet chocolate chips
  • 1/4 cup sprinkles (pastel-colored)

1. Mix together the peanut butter, confectioners sugar, and 3 tbsp butter until smooth. Fold in the cereal and knead with hands until it forms a dough. Form the mixture into 18 egg shapes.
2. Add a couple of inches of water to a saucepan and bring to a simmer. Place chocolate chips and remaining butter in a heatproof bowl that just fits over the saucepan (the bottom should not touch the water) and stir until chocolate melts.
3. Use a fork to dip each egg in the melted chocolate to coat and set on a wax paper-lined baking sheet. Decorate with sprinkles. For best results, chill at least 1 hour before serving.
