Mini Meatloaves

Makes 12 servings


  • 1 lb 90% lean ground beef
  • 1/2 cup quick-cooking oats
  • 1/2 cup finely minced onion
  • 1/4 tsp ground black pepper
  • 1/4 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 cup finely grated carrot
  • 5 Tbsp Parmesan cheese (1/4 cup + 1 Tbsp, divided)
  • One 8oz can tomato sauce, divided


1. Preheat oven to 375°F. Spray 12 muffin cups with nonstick cooking spray and set aside.

2. In a large bowl, combine ground beef, oats, onion, pepper, garlic powder, oregano, carrot, 1/4 cup Parmesan cheese and half of the tomato sauce and mix well.

3. Divide into muffin cups and bake for 25 minutes. During the last five minutes, top with the remaining tomato sauce.

4. Remove from oven and sprinkle with remaining 1 tablespoon of Parmesan cheese.
