Makes 6 servings

  • 1 cup diced red onion
  • 3 1/4 lbs baby back ribs
  • 2 tbsp minced garlic
  • 1 cup barbecue sauce
  • 1/2 cup ketchup
  • 2 tbsp honey

1. Set the diced onions into the bottom of a 6–7 quart slow cooker. Cut the rack of ribs in half and place on top of the onions. Mix together the garlic, barbecue sauce, ketchup, honey, and 1 cup water in a bowl until well combined. Pour over top of ribs. Set slow cooker to low and cook for 4 hours or until fork tender.
2. Set grill to high heat. Use tongs to transfer ribs from slow cooker to a plate and pour the sauce from the slow cooker into a bowl. Skim the fat off the sauce. Grill ribs for 10–15 min., brushing with the barbecue sauce and flipping often, until slightly charred. Serve with any remaining sauce on the side.
