Pulled Chicken Sandwich



  • 6 boneless skinless chicken thighs
  • 1/2 c soy sauce
  • 1 tsp garlic powder
  • 3/4 tsp ground ginger
  • 1/2 tsp cayenne pepper
  • 1/2 red onion, sliced
  • 4 burger buns

Broccoli Slaw

  • 1 12 oz. bag broccoli slaw
  • 2 Tbs extra virgin olive oil
  • 2 tsp sesame oil
  • 2 tsp white wine vinegar
  • 3/4 tsp garlic powder
  • 1/2 tsp soy sauce
  • 1/2 tsp ground ginger
  • 1/2 tsp cayenne pepper

Baked French Fries

  • 2 russet potatoes, cut into matchsticks
  • 1/2 c parsley, finely chopped
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder


1. Combine soy sauce, garlic powder, ginger, cayenne together and pour over chicken. Cook the chicken thighs on high for 4 hours or on low for 8 hours. Once cooked, pull the chicken with two forks and set aside.
2. While the chicken is cooking, prepare the broccoli slaw. Whisk together the olive oil, sesame oil, vinegar, garlic powder, soy sauce, ginger and cayenne. Throw the broccoli slaw in a large bowl then pour over the mixture and toss until well coated. Refrigerate for 4 hours or overnight.
3. While the slaw is marinating, prepare the french fries. Preheat the oven to 450. Cut the potatoes in half long ways, then into ¼ inch slices, then cut matchsticks. Drizzle olive oil on them then toss with salt, pepper and garlic powder.
4. Spray a sheet pan with cooking spray then arrange the fries in one even layer. Bake for 30 mins, tossing once. When they are done, toss with a pinch more of salt and parsley.
5. To assemble, add pulled chicken on a bun and top with the broccoli slaw. Serve the fries on the side and enjoy.
