Grilled Tropical Salsa

Makes 4 servings


  • 2 cups papaya, cut into chunks
  • 2 cups pineapple, cut into chunks
  • 1 tablespoon coconut oil, melted
  • 1 teaspoon ginger, minced
  • 1/2 jalapeño pepper, seeded, minced
  • 1/4 cup cilantro leaves, minced
  • 1/4 cup mint leaves, minced
  • 1 lime, juiced
  • 1 teaspoon raw honey


1. Heat grill. Skewer papaya and pineapple chunks.
2. Brush with melted coconut oil.
3. Place on hot grill until you see grill marks.
4. Turn over skewers and grill until you see grill marks. Remove from grill. This will take about 5 minutes. Do not overcook or papaya will turn mushy.
5. Dice grilled papaya and pineapple into small pieces and toss gently with ginger, jalapeño pepper, cilantro leaves, mint leaves, lime juice, and honey.
6. Serve over grilled shrimp or chicken.
