1. Place chicken wings in a large resealable plastic bag. Roughly chop the onions and garlic and put in food processor with the sugar, hot sauce, allspice, bay leaf, thyme, vinegar, oi and salt (in moderation). Process until smooth. Pour marinade over chicken, making sure it covers every piece, and refrigerate for at least 1 hour
2. Meanwhile, preheat the oven to 400° and line 2 baking sheets with parchment or foil. Divide the chicken wings between the baking sheets and let come to room temperature. Bake the wings in the middle of the oven for 40 min., turning every 10 min. If the wings start to burn, cover with foil.
