Chicken Burrito Salad Bowl

  • 8 cups romaine lettuce, chopped
  • 2 cups leftover cooked chicken, chopped
  • 1 cup cooked black beans
  • 1 cup avocado, chopped
  • 1 cup tomato, chopped
  • chopped scallions
  • minced cilantro
  • extra virgin olive oil
  • lime juice
  • chili powder
  • hot sauce


1. Place lettuce greens in serving bowls. Top with chicken, black beans, avocado, and tomato. Scatter scallions and cilantro on top. Drizzle with a little olive oil, squeeze lime juice on top and season with chili powder and hot sauce.
