Pan Roasted Paprika Herbed Chicken

  • 3 pounds chicken parts, on the bone
  • 1 tablespoon paprika
  • 2 teaspoons ground cumin
  • 2 teaspoons dried thyme
  • 2 teaspoons dried oregano
  • 1 teaspoon smoked paprika
  • 5 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 limes, juiced
  • 2 tablespoons extra virgin olive oil


1. Preheat oven to 425 degrees.
2. Place chicken in a large bowl. Add paprika, cumin, thyme, oregano, smoked paprika, garlic, salt and pepper. Squeeze lime juice on top and add olive oil. Toss chicken until coated well with spices.
3. Rub some spice mix underneath the skin of chicken pieces. Transfer to a foil or parchment paper lined baking sheet.
4. Roast chicken for 30 minutes or until cooked through.
