Smoky Slow Cooker Chili

  • 2 tablespoons olive oil
  • 2 large onion, chopped
  • 4 garlic cloves, minced
  • 2 pounds ground meat (turkey, chicken, or beef)
  • 2-4 chipotle peppers, in adobo sauce, finely chopped
  • 2 tablespoon chili powder
  • 2 teaspoons smoked paprika
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • Two 15-ounce cans tomato sauce
  • Two 15-ounce cans black beans or red beans, rinsed and drained
  • 1 cup water


1. In a large skillet, sauté onion and garlic in olive oil. Add ground meat and sauté until browned, breaking up pieces. Transfer to slow cooker. Add chipotle peppers, chili powder, smoked paprika, cumin, oregano, salt, tomato sauce, beans and water.
2. Cook on high for 4 hours or on low for 7-8 hours.


1. Use 2 chipotle peppers for a milder chili; use 4 chipotle peppers for a spicier chili.
2. Serve with an assortment of toppings such as shredded smoked cheddar cheese, chopped scallions and cilantro.
