Makes 8 servings

  • 1 head cauliflower
  • 1/2 orange bell pepper
  • 1/2 red bell pepper
  • 1/2 bunch radishes
  • 1/2 bulb fennel
  • 1 carrot
  • 1 stalk celery
  • 2 tbsp fresh parsley
  • 2 tbsp fresh chives
  • 2 black olives
  • 1 (16 oz) container ranch dressing

1. Trim the cauliflower to resemble a skull. Slice the bell peppers into thin strips, the radishes into thin rounds, and the fennel into slices. Slice the carrot and celery. Chop the herbs.
2. Start to shape the vegetables into a skeleton: place the cauliflower as the head, the bell peppers as the ribs, the sliced carrots as the spine, the fennel as the legs, and the celery as the arms. Mount the olives to the skull using toothpicks. Incorporate other vegetables as desired.
3. Pour the ranch dressing into a bowl. Stir the herbs into the dressing.
