Turkey and Veggie Meatloaf

  • 1 lb ground turkey
  • 1/2 cup dried breadcrumbs
  • 1/2 cup ketchup
  • 1 large egg
  • 1/2 cup grated carrot
  • 1/2 cup grated zucchini
  • 1/2 cup grated sweet potato
  • 1 tbsp Dijon mustard
  • 2 tsp Worcestershire sauce
  • 2 tbsp ketchup, extra for serving


1. Preheat oven to 350°F. In a large bowl, combine ground turkey, breadcrumbs, 1⁄2 cup ketchup, egg, vegetables and mustard. Mix well. Season with salt (in moderation) and pepper.
2. Pack mixture in a loaf pan. Combine Worcestershire sauce and remaining ketchup. Brush over meatloaf.
3. Bake for 45 min., or until internal temperature reaches 165°F.


Serve with crushed fingerling potatoes tossed with butter and chopped parsley.
