Cinnamon Banana Bread Pudding



  • 1/2 loaf Italian day old bread
  • 2 eggs
  • 2 cups milk (or flavored coffee creamer!)
  • 1/2 stick butter, melted
  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon
  • 1 large or two small bananas, mashed


1. Preheat oven to 350ºF.
2. Cut Italian bread into small 1-inch cubes, and place in a baking dish.
3. Whisk eggs together in a bowl, then mix in milk, butter, sugar, cinnamon, and banana.
4. Pour the banana mixture over the bread, making sure to fully coat all bread (unless you like crispy pieces).
5. Bake in oven at 350ºF for 30 minutes, or until you see the bread turn a golden brown color.
6. Remove from oven, and let sit 5 minutes before serving. Sprinkle with extra cinnamon and serve!
