Strawberry Colada Popsicles

Makes 8 popsicles


  • 2½ cups strawberries, trimmed, halved
  • 5 Tbsp sugar, divided
  • 2 tsp fresh lemon juice
  • 1 can (13½-oz) unsweetened coconut milk
  • 1 cup fresh pineapple chunks
  • ½ cup banana slices


1. Place strawberries and 3 Tbsps sugar in a bowl; toss to coat strawberries with sugar. Let sit for 1-hour until natural juices from strawberries come out.

2. Blend strawberries with natural juices and lemon juice (blend until smooth or leave a few chunks if you like); transfer to a bowl. Rinse blender out.

3. Scoop out ½ cup coconut cream from coconut milk (the solid white part) and place in blender, along with pineapple, banana and remaining 2 Tbsps sugar.

4. Fill 8 popsicle molds ⅓ full with strawberry mixture. Spoon coconut pineapple mixture on top.

5. Fill popsicle molds to the top with remaining strawberry mixture.

6. Freeze for 5 hours or until solid.
