No-Bake Skinny Raspberry Cheesecakes

  • ¼ cup cold water
  • 1 pouch (7 g) unflavored gelatin
  • ¼ cup water
  • 2 cups low-fat cottage cheese
  • 1 cup low-fat plain yogurt
  • 1 cup powdered sugar
  • 3 tsp vanilla extract
  • 4-oz Enjoy Life Soft Baked Double Chocolate Brownie Cookies or other soft chocolate cookies
  • 1 dozen raspberries
  • Grated dark chocolate, optional


1. Place water in small bowl. Sprinkle gelatin on top and mix. Let stand for 1 minute.

2. Place cottage cheese in food processor and process until smooth. Add yogurt, powdered sugar, vanilla, and softened gelatin. Process until well blended.’

3. Crumble cookies. Divide cookies among four glasses, reserving a little for the topping.

4. Divide cheesecake filling among the glasses.

5. Chill 4 hours or until firm.

6. Top each glass with 3 raspberries; sprinkle with reserved cookie crumbs and grated dark chocolate.
