Texas Slow Cooker Brisket

Prep time 5 minutes
Cook time 310 minutes
Makes 12 servings

  • 3 Tbsps paprika
  • 2 Tbsps packed brown sugar
  • 1 Tbsp ground cumin
  • 1 Tbsp kosher salt
  • 1 (4 lbs) pkg beef brisket
  • 1 cup barbecue sauce

1. Mix together paprika, brown sugar, cumin, and kosher salt in a small bowl. Rub the beef brisket on both sides with this mixture. Set in the bowl of a 6–7 quart slow cooker and top with barbecue sauce and 1 cup water.

2. Set slow cooker to low heat and cook for 5 hours or until fork tender. Carefully remove the brisket and transfer to a cutting board. (For best results, allow 10 minutes to rest.) Pour liquid from the slow cooker into a large bowl. Allow sauce to cool slightly and skim fat from the top.

3. Set grill to high. Transfer brisket to grill and cook 4–5 minutes per side. Slice the brisket against the grain on a diagonal. Serve with the cooking liquid.
