Go-To Summer Salad

Makes 3-4 servings


  • 2 chicken breasts cubed and skewered
  • 1 avocado
  • 1 bag of mixed greens
  • 2 ears of corn
  • Handful of cherry tomatoes
  • ¼ cup chopped cucumber
  • ¼ cup sliced almonds
  • ¼ cup crumbled blue cheese
  • 2 hard-boiled eggs – sliced in half
  • 5 leaves of julienned basil

Salad Dressing

  • Good Seasonings Italian Salad Dressing Mix
  • Extra virgin olive oil
  • Balsamic vinegar
  • Dijon mustard
  • 1 lemon


Follow the instructions on the Good Seasoning package to make your dressing but add in a teaspoon of mustard and a squeeze of lemon for an added freshness!

Marinate the chicken skewers in a bag with a drizzle of the salad dressing. Put in the fridge for an hour or so.

Take the chicken skewers to the grill and grill until fully cooked.

While the skewers are grilling, wash the lettuce and toss into a big bowl.

Add the cherry tomatoes (you can slice in half or leave them whole), diced avocado, corn (chopped off the cob), blue cheese crumbles, sliced almonds and finish with the sliced eggs lined up around the edge of the bowl.

Sprinkle basil and add a drizzle of salad dressing and then serve in big bowls!
