Cauliflower Fried Rice

 

Ingredients

  • 1 bag of frozen cauliflower rice
  • ½ cup of frozen peas and carrots
  • 1 Tbsp of minced garlic
  • ¼ cup of coconut aminos
  • 2 chicken breasts
  • ¼ cup diced yellow onion
  • 2 eggs
  • Sriracha
  • ¼ cup sliced green onion
 

Directions

1. Empty bag of frozen cauliflower rice in a non-stick pan with a Tbsp of olive oil.
2. Stir to break up the frozen chunks.
3. Add in diced onion and garlic and stir fo a few more minutes.
4. Add in frozen peas and carrots and keep stirring together.
5. While your rice is cooking, in a separate pan cook the 2 chicken breasts that are cut up into cubes. Season with salt, pepper and coconut aminos (a great way to eliminate soy which has gluten in it!) Once the chicken is cooked, add to rice pan and continue to cook.
6. Create an empty space in the center of the pan and crack 2 eggs.
7. Scramble for a few seconds and then combine with the rest of the dish.
8. Add more coconut aminos to the dish to add that soy flavor and a drizzle of sriracha if you like a bit of spice.
9. Once the dish is fully cooked, serve and garnish with more sriracha and sliced green onions. Enjoy!
